So I'm a huge slacker on this post because I didn't get a picture to show how awesome these whoopie pies looked in the end. I decided to go with the chocolate chip cookie dough (no eggs) rather than a butter cream filling or even a marshmallow cream only because I was craving some chocolate. Anyway, super easy to make and super yummy to eat!
Here's how to make the cookie dough filling:
When filling the whoopie pies, my handy-dandy zip lock bag busted on me so not only did I have a mess, I had to figure out how to spread the dough on the pie without it looking too thin. I figured it out and they were eaten up before I could even take a picture.
Ingredients
- 1 cup butter, room temperature
- 1 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 1/4 cup + 2 Tbsp milk
- 2 tsp vanilla
- 2 cups flour
- 1 cup mini chocolate chips
How to Make
- In a mixer, cream together butter and both sugars.
- Add in vanilla and milk. Stir until combined.
- Slowly add in flour and turn mixer up to medium until mixed well.
- Fold in chocolate chips.
- Fill ziplock or piping bag with cookie dough and pipe onto whoopie pies.
