Whoopie Pie Filling.

So I'm a huge slacker on this post because I didn't get a picture to show how awesome these whoopie pies looked in the end. I decided to go with the chocolate chip cookie dough (no eggs) rather than a butter cream filling or even a marshmallow cream only because I was craving some chocolate. Anyway, super easy to make and super yummy to eat! 


Here's how to make the cookie dough filling: 
When filling the whoopie pies, my handy-dandy zip lock bag busted on me so not only did I have a mess, I had to figure out how to spread the dough on the pie without it looking too thin. I figured it out and they were eaten up before I could even take a picture. 
Ingredients
  • 1 cup butter, room temperature
  • 1 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/4 cup + 2 Tbsp milk
  • 2 tsp vanilla
  • 2 cups flour
  • 1 cup mini chocolate chips
How to Make
  1. In a mixer, cream together butter and both sugars.
  2. Add in vanilla and milk. Stir until combined.
  3. Slowly add in flour and turn mixer up to medium until mixed well.
  4. Fold in chocolate chips.
  5. Fill ziplock or piping bag with cookie dough and pipe onto whoopie pies.
