Easy Chicken Pot Pie.

So, this week I decided I was going to create a meal plan for the week - I wanted to make things that were different than the norm. Last night I made "Chicken Pot Pie' that I found on Real Simple. I was super excited about this recipe for several different reasons - first off, I had never made Chicken Pot Pie nor did my family make it much growing up. And secondly, I was really looking forward to eating lots of veggies (I'm weird.) 


So anyway, I get to working on the recipe only to look down at the bottom and see a ton of negative comments about it. So disappointed! But that wasn't going to stop me. I decided I would learn from their mistakes and hopefully make the best Chicken Pot Pie ever!! 

I mean  - look at these, wouldn't you be so discouraged too?!?



 I push through despite these horrible comments... 

And this was my creation. 

Here is the recipe I followed, using the advice from previous cooks: 

Chicken Pot Pie: 

Ingredients

  • 1  3 1/2- to 4-pound rotisserie chicken, meat shredded (I seasoned 2 chicken breast, shredded)
  • 1  10-ounce package frozen mixed vegetables (I bought that mixed veggie you can cook in the microwave in 4 minutes)
  • 1  10.75-ounce can condensed cream-of-mushroom soup (I used cream of chicken soup)
  • 1/4  teaspoon kosher salt
  • 1/4  teaspoon black pepper
  • 1  10-count tube refrigerated biscuits

Directions

  1. Heat oven to 400° F. Combine the chicken, vegetables, soup, salt, pepper, and 3/4 cup water (I used less water- about 1/2 cup) in a large bowl.
  2. Transfer the mixture to an oven-safe casserole, cover with foil, and bake for 15 minutes.
  3. Remove the foil, cover the filling with the biscuits, and bake until the biscuits are golden brown and cooked through, about 15 minutes.
The biscuits were a little gooey and others had complained in that comment section before - so I split the biscuits with a spatula, trying to get the sides good and done. That's why it looks like my biscuits aren't connected. I thought maybe trying to cook them on a baking sheet next time and then placing them on the top later... 


I hope this worked better for you than the others, because as of today at 12:45p.m. this was complete gone... I think that would be considered a successful meal. Wouldn't you say?
